There are as many recipes for Hummus as there are for Gumbo. All good, just different. As my Dad said, “I never met a gumbo I did not like” and we are that way with Hummus, we like them all. The recipe below is one that we use at home and enjoy spicing it up with various indgredients. We have garnished with roasted sweet red peppers to this recipe. Instead of peppers you could garnish with pine nuts, garlic, or your choice of ingredients.
Hummus is a very popular Middle Eastern dip served with pita bread or chips. Hummus is chick peas and tahini with various spices.

Ingredients
- 1 Red Sweet Pepper, sliced
- 1 can Chick Peas, 15.5 oz
- 1 Tbl Olive Oil
- 3 oz Bean liquid
- 1 Tbl chopped garlic
- 2 Tbl Lemon juice
- ¼ tsp Cumin
- 3 Tbl Tahini
- ½ tsp salt
Roasted Peppers
Heat cast iron skillet to medium. Place sliced peppers season with a little salt in skillet and roast until slightly charred and soft. We serve them cut in short strips on the hummus but you can chop into small bits if you prefer.
Hummus
Drain Chick Peas reserving liquid. Place peas in food processor or blender (we use a bullet), add remaining ingredients. Blend until smooth and well mixed.
Put Hummus in serving dish and make a well in the center, add a little olive oil and top with roasted peppers marinaded in oil. Serve with Pita chips.
We find the Hummus better if it sits over night.
