Cajunville Mardi Gras Salad

Cajun French: Le chou (lu shoo) – Cabbage

This recipe celebrates one of the holidays special to south Louisiana – Mardi Gras. The colors of Mardi Gras – Purple, Green and Gold shine in our Mardi Gras Salad. There is a sweetness to the salad, so it goes well with pork or chicken. Included is a chicken recipe to accompany the salad.

Ingredients:
1 cup purple cabbage
1 red onion
2 cups broccoli florets
1 cup green grapes
1 cup red grapes
1 cup golden raisins
1 yellow bell pepper
1 cup yellow cherry tomatoes
1 cup pecans
1 Tbl butter
Olive oil
Cane vinegar
Cane syrup
Lemon
Creole mustard
Honey
Cajunville Seasoning
Red pepper flakes
1# chicken breast

Equipment:
Cutting board
Sharp knife
Measuring cups and spoons
Mise en Place bowls
10” or 12” skillet (we use cast iron)
Large bowl for salad
Large mixing spoon
Bowl for marinating chicken
Jar for salad dressing or bowl and whisk
Whisk
Plate and utensils for serving

Mise en Place:
All vegetables and fruits should be about the same size as the raisins
1 cup purple cabbage – sliced thin
1 red onion – sliced thin
2 cups broccoli florets – broken up about size of raisin
1 cup green grapes – halved
1 cup red grapes – halved
1 cup golden raisins
1 yellow bell pepper – diced
1 cup yellow cherry tomatoes – halved
1 cup pecans – chopped
1 Tbl lemon juice – about ½ lemon
1# chicken breast – sliced ¼” medallions
Olive oil
Cane vinegar
Creole mustard
Honey
Cane syrup
Cajunville Seasoning
Red pepper flakes

Directions:

Chicken Marinade:
3 Tbl Olive oil
1 Tbl Cane Vinegar
1 Tbl Lemon juice
1 Tbl Cajunville Seasoning
1 Tbl Honey
1 Tbl Creole mustard

Whisk ingredients together
Add chicken
Set aside

Salad Dressing:
¾ cup olive oil
3 Tbl cane vinegar
3 Tbl cane syrup
2 Tbl Creole mustard
½ tsp red pepper flakes

Combine
Using a bowl, whisk
Using a jar, shake
Whisk or shake
Set aside

Toast Pecans:
Heat cast iron skillet over medium to medium high heat
Melt butter
Add pecans and toast
Remove from skillet to cool

Mardi Gras Salad:
1 cup purple cabbage
1 cup red onion
2 cups broccoli florets
1 cup green grapes
1 cup red grapes
1 cup golden raisins
1 cup yellow bell pepper
1 cup yellow cherry tomatoes
1 cup roasted pecans
1 Tbl butter

Combine all salad ingredients
Add dressing
Mix well

Chicken:
Heat skillet to med high
Add chicken one piece at a time
Cook until done

Add cooled pecans to salad and combine

Serve
