Cajun French: le chou (lu shoo) – cabbage
This is a different take on a hot dog. Andouille or Cajun smoked sausage is used for the meat. Everything else builds the flavors of the dog from sweet to hot. We call it a five napkin dog since the flavors may drip down your arm. Celebrate July 4 or any summertime get together the Cajun way.

Ingredients – 2 servings
Poboy bread (hoagie buns or any other bun can be used)
1# andouille or smoked Cajun sausage
1 Red onion
1 Red bell pepper
Cabbage, small – Purple & Green
Sweet & hot jalapenos – optional
8 oz pepper jack cheese
Butter
Olive oil
Mayonnaise
Cane vinegar
Cane syrup
Cajunville seasoning
Cayenne
Creole mustard
Equipment:
Cutting board
Sharp knife
Measuring cups and spoons
Mise en Place bowls/plates
Knife for spreading
Cooking spoon
Cast iron skillet or other heavy skillet
Bowl for mixing sauce
Bowl for slaw
Whisk
Large spoon for mixing
Plate for cooked items
Serving plate and napkins
Mise en Place for 2 servings:
Some sausage and andouille casings are easily removed, others break the meat. If yours is easily removed, do so.
If you leave the skin on, make cuts in the skin to stop the sausage curling.
1 med red onion cut in ¼” rings then halved
1 med red pepper cut in ¼” strips
1 cup green and red cabbage – sliced thin, 2”-3” strips – for slaw
4 oz grated pepper jack cheese
½ cup mayonnaise – put in bowl for swamp sauce
Poboy or hoagie bread or other similar roll
Sweet & hot jalapenos – optional
Butter
Olive oil
Cane vinegar
Cane syrup
Cajunville seasoning
Cayenne
Creole mustard
Directions:
Make Swamp Sauce
½ cup mayo
2 Tbl cane vinegar
2 Tbl cane syrup
1 ½ tsp Cajunville seasoning
⅛ tsp cayenne
2 tsp Creole mustard
Whisk together and set aside
Combine:
1 cup purple cabbage
1 cup green cabbage
Add:
2-3 Tbl Swamp Sauce
Combine and taste for seasoning
If necessary season with salt and pepper
Add more Swamp Sauce if desired
Set aside
Cut bread and Andouille/Sausage the same length
Heat skillet to medium high
Cut sausage or andouille in half lengthwise
Grill meat adding oil if necessary
Remove meat from skillet and put in plate
Add 1 Tbl olive oil to skillet
Add red onions
Saute until carmelized about 15 minutes
Remove and add to plate
Add red bell pepper to skillet adding oil if necessary
Saute red bell pepper until tender
Remove and add to plate
Open bread
Butter both sides of bread and toast in skillet
Remove from skillet
Turn heat to low
Spread toasted bread with Swamp Sauce
Spread cheese on top section of bread
Return to skillet, cover skillet to melt cheese
On bottom section of bread stack
Slaw
Jalapenos
Onions
Peppers
Andouille or sausage
Place top section of bread on stack
