In Honor of Vieux To Do: Shrimp, Creole Tomato, & Zydeco

Vieux To Do” is this weekend in the French Quarter in New Orleans, LA.  This festival is three in one: Creole Tomato, Cajun Zydeco Music, and Seafood Festivals.  To get ourselves ready to eat, drink, dance and thoroughly enjoy the heat we are preparing a shrimp dish along with a creole tomato salad.  We have Zydeco music on, opened a favorite bottle of wine and we are ready to cook.  Join us as we enjoy the bounty South Louisiana offers…

Creole Tomato Salad

  • 1 lg Creole Tomato, cubed
  • ½ cucumber, thinly sliced
  • ½ cup creole red onion, thinly sliced
  • 2 Tbl Pecan Oil
  • 1 Tbl Fig Infused Balsamic Vinegar
  • Salt and Pepper to taste
  • 4 leaves fresh Basil, thinly sliced

Combine ingredients and mix well

Cajun Grain Brown Jasmine Rice

  •  1 cup raw rice
  • 2 cups water
  • ¼ tsp salt
  • ½ tsp Cajun Seasoning

Rinse rice.  Bring water to a boil, add rice and seasonings.  Reduce heat to low, cover and simmer for 20-25 minutes.  Remove from heat and steam for 10 minutes.

Use your favorite rice if Cajun Grain Brown Jasmine is not available.

Shrimp

  • 1 sm Creole Red Onion,  cut in half and sliced
  • 4 cloves garlic, smashed and rough chopped
  • 1 Tbl Olive Oil
  • Pinch salt

         Sauté until soft.  Remove from heat and place in small bowl.

  • 12 lg Shrimp, peeled with tails left on
  • 2 Tbl Pecan Oil
  • Cayenne Pepper
  • Papa Tom’s Paprika (local paprika from the farmers market)
  • Salt

Season shrimp on one side with Salt, Cayenne and Paprika.  Heat oil to medium, place shrimp in skillet in single layer seasoned side down and cook until pink (1-2 minutes), turn and cook until pink on other side (1-2 minutes) season with just paprika.  Remove Shrimp and add onions and garlic to skillet, add more paprika for color.

Plate

Place a serving of rice in the plate, arrange shrimp over rice.  Dress rice and shrimp with onions and garlic mixture.  Place a serving of salad on side of shrimp and rice.  Garnish with parsley.

 

Serve and enjoy with Zydeco music!
