Cajunville Shrimp Dip

Cajun French: l’ail (l’a-ee) – garlic

We are celebrating Spring this month. Outdoor activities will soon be on everyone’s mind. These include picnics, outdoor grilling, games and parties on the lawn and so many more. Cajunville Shrimp Dip is a recipe for all activities. It can be served as a dip with chips, stuffed in tomatoes, an addition to bread bowls or served on a bed of salad. The ideas are almost endless. Enjoy this refreshing dish for any occasion.

Ingredients:

1 pound large shrimp, peeled and deveined
¼ cup salt
1 tsp minced garlic
½ tsp Cajunville seasoning
1 tsp grated lemon zest
⅓ cup diced celery
½ cup sour cream
½ cup whipped cream cheese
1 Tbl mayonnaise
½ tsp lemon juice
1 tsp smoked paprika
1 Tbl fresh parsley, minced
1 Tbl fresh dill, minced
2 tsp fresh chives, minced
¼ tsp cayenne
2 tsp horseradish
¼ tsp Worcestershire sauce
¼ tsp Crystal hot sauce
⅛ tsp salt
4 Tbl sundried tomates, chopped
¼ cup green onions, chopped

Equipment:
Mise en Place bowls
Cutting board
Sharp knife
Measuring spoons
Measuring cups
Microplane or Zester
Large bowl for making dip
Pot for boiling shrimp
2 qt bowl for ice bath
Large mixing spoon
Tasting spoon
Whisk
Spider or slotted spoon
Serving bowl

Mise en Place:
1 pound large shrimp, peeled and deveined
¼ cup salt
1 tsp minced garlic
1 tsp grated lemon zest
½ tsp lemon juice
⅓ cup diced celery
½ cup sour cream
½ cup whipped cream cheese
1 Tbl fresh parsley, minced
1 Tbl fresh dill, minced
2 tsp fresh chives, minced
¼ cup green onions, chopped
4 Tbl sundried tomates, chopped

Directions:

Place in large bowl:

½ cup sour cream
½ cup whipped cream cheese
1 Tbl mayonnaise
½ tsp lemon juice
1 tsp smoked paprika
1 Tbl fresh parsley, minced
1 Tbl fresh dill, minced
2 tsp fresh chives, minced
¼ tsp cayenne
½ tsp Cajunville seasoning
2 tsp horseradish
¼ tsp Worcestershire sauce
¼ tsp Crystal hot sauce
⅛ tsp salt

Mix together well
Add:

1 tsp minced garlic
1 tsp grated lemon zest
⅓ cup diced celery
4 Tbl sundried tomatoes, chopped

Fold in.
Taste for seasoning.
Set aside

To boiling water (no seasoning) add 1# large shrimp
Boil until pink (about 3 min, could be ready before coming back to boil)
Taste for doneness

While boiling, in a large bowl add 1 qt water and ¼ cup salt. Whisk until salt melts.
Add ice to water for ice bath
When shrimp are done, place in ice water bath
Let shrimp soak until cool for 3-5 minutes (they will cool and soak up the salt)
Remove shrimp
Cut shrimp in ½” pieces (for large shrimp cut in ⅓ )
Add shrimp to dip base
Fold shrimp in
Add green onions to mixture
Fold in
Enjoy
