Cajun French: l’oeuf (l’uf) – egg
John’s grandmother always made crepes, never pancakes. She would spread them with butter and a little sugar and roll them. This is an excellent way of eating crepes and it always brings memories for John. This month we are taking them up a notch with jam or jelly, whipped cream and berries and syrup. Anything you like is acceptable with crepes. Use your imagination.

Ingredients: Serves 4
1 cup flour
2 Tbsp sugar
Pinch of salt
4 eggs
1 cup milk
1/2 tsp pure vanilla extract
4 to 6 Tbsp butter, melted
Jam/Jelly – your favorite flavor
Cane syrup
1 pint Heavy whipping cream
Strawberry or other berry – your favorite
Amaretto or other spirit for flavoring cream (optional)
Equipment:
Measuring cups & spoons
Cast iron, crepe or non-stick skillet with 8” bottom
Large mixing bowl
Bowl for whipping cream
Plate for stacking crepes
Dinner knife
Spatula – offset if you have one
Whisk
Beater for cream or use whisk
Small scoop
Spoon for spreading jam/jelly
Serving plate and utensils
Mise en Place
1 cup flour
2 Tbl sugar
Salt
4 eggs
1 cup milk
½ tsp vanilla
1 stick butter
1 cup heavy cream
Chill metal bowl for whipping cream
Steps:
Whip cream with 1 Tbl Amaretto, place in frig
Add 4 Tbl butter to cold skillet
Place skillet on medium to medium high heat
Combine dry ingredients:
1 cup flour
2 Tbl sugar
Pinch of salt
Combine wet ingredients
4 eggs
1 cup milk
½ tsp vanilla
Whisk wet ingredients
Slowly add dry ingredients to wet ingredients as whisking until smooth
Pour excess butter into batter and whisk
If batter is too thick, add 1 tsp water at a time
Pour ¼ cup batter into skillet
Cook approx 1 minute
Flip and cook approx 30 sec
Remove and place on plate
Options for plating:
Spread thinly with jam/jelly/butter/etc
Roll
Fold in half then fold again in half
Stack crepes forming a cake
Dress with syrup, whipped cream, fruit, etc.
