Cajunville Shrimp Maque Choux

Cajun French: le maquechou (lu mak-shoo) – fried corn

The modern version of this dish is spelled differently from the original Cajun dish. It was a dish made with fried corn, green bell pepper, onion and sometimes garlic. Over the years, it has been changed and modernized to tastes. Today it has the addition of celery and can also have tomatoes, beans and anything the creator wants to add. It always starts with corn.

Ingredients:
1# medium raw shrimp, peeled and deveined
1 cup raw rice
1 ½ cups lima beans (12 oz frozen)
1 ½ cups corn (12 oz frozen)
1 onion
1 bell pepper (any color, we use red)
1 rib celery
2 cloves garlic
2 Tbl Olive oil
2 tsp Cajun Seasoning
1 tsp salt
Broth from lima beans

Equipment:
Cutting board
Measuring cups and spoons
Mise en Place bowls/plates
Sharp knife for cutting
Pot for cooking lima beans and corn (cooked ahead so one pot will work)
Pot for cooking rice (cooked ahead)
Dutch oven or other deep pot
10”-12” cast iron skillet or other heavy skillet
Cooking spoon
Tasting spoon
Serving plates/bowls and utensils

Mise en Place:
Defrost shrimp
Cook rice
Cook lima beans and corn according to package directions just until al dente. We will cook more. Keep lima bean broth for later use.
Dice:
1 cup onions
½ cup bell pepper (we use red)
½ cup celery
2 cloves garlic (more if desired)

Directions:

Season shrimp with
1 Tbl Cajunville seasoning
1 Tbl olive oil
Mix well, set aside

Heat Dutch oven to medium high
Add 2 Tbl olive oil and heat
Add onion, bell pepper and celery
Add ¼ tsp Cajunville seasoning
Saute for approximately 15 minutes
If it gets dry, add a small amount of stock – about 1 tsp at a time
Add garlic and saute for about 2 minutes
Add lima beans and corn
Combine
Add 1 Tbl Cajunville seasoning
Add ¼ cup stock
Combine and simmer
Add additional stock as needed

Heat skillet to medium high
Add 1 tsp olive oil
When hot add shrimp
Cook until just opaque
Add shrimp to maque choux
Add ¼ cup stock to skillet to deglaze
Add skillet stock to maque choux
Combine and simmer for about 2-3 minutes or until shrimp are fully cooked
Taste for seasoning
Serve with rice
