Cajun French: la cuillère (la kū-ee-air) – spoon
Spoonbread is soft and creamy unlike crumbly cornbread. The dish can be eaten as an entree or as a side. Pour crawfish etouffee over and it is an elegant entree. Use it as a side for gumbo. Anyway you serve it, the dish will be enjoyed.

Ingredients:
1 box Jiffy Cornbread Mix
2 eggs
1 onions
1 red bell pepper (use any color, we use red)
Hot & sweet jalapenos
8 oz block sharp cheddar cheese (we use white)
1 stick butter
1 14.5 oz can cream corn
Cajunville seasoning
12 – 16 oz crawfish tails
1 lemon
Pepper jelly
Zapp’s Crawtator Chips

10” cast iron skillet 2” deep or other heavy oven proof skillet
Mixing bowl

Mise en Place:
1 cup onions, chopped small
½ cup red bell pepper, chopped small
½ cup drained hot & sweet jalapenos, roughly chopped
8 oz block sharp cheddar cheese, grated
Open can of cream corn
1 box Jiffy Cornbread Mix
2 eggs
1 stick of butter
Cajunville seasoning
1 pound crawfish tails
1 lemon
Pepper jelly

Instructions:
Drain crawfish
If you like add about 1 Tbl lemon to crawfish, toss
Preheat oven to 400 degrees residential or 350 convection.
Place the 6 Tbl butter in skillet and heat over medium-high heat.
When melted, add 1 cup onion and ½ cup bell pepper. Cook until tender about 5 minutes.
Add crawfish, 1 tsp Cajunville seasoning and ½ cup hot & sweet jalapenos. Turn off heat. Combine.
Remove mixture from skillet and place in bowl to cool.
In a large bowl, whisk egg. Add cream corn. Whisk together. Add Jiffy mix and combine just until blended.
Add cheese a little at a time, folding it into the mixture.
Add crawfish mixture and fold in until blended.
Let mixture rest for 10 minutes
Heat skillet to medium high
Add ½ to 1 Tbl butter to skillet and melt
Transfer crawfish mixture to the cast iron skillet.
Bake 40 minutes, or until golden on top and set in the middle
Remove from oven and brush with pepper jelly
Sprinkle crushed chips on top
Serve
Note: Other proteins may be used – sausage, chicken, ground meat, shrimp, etc.
Crumbled bacon can be substituted for crushed chips
