Cajunville Marinated Feta

Cajun French: le fromage (lu frō-maj) – cheese

Marinated feta was prepared for the Cajunville Stuffed Squash. It is also good as an appetizer, salad topping, bread dipping and many more ways to use. Instead of feta, mozzarella pearls can be substituted for feta.

Ingredients

  • 1 Block Feta Cheese, in brine
  • 1 Lemon
  • 4 Green Onions
  • 3 Garlic Cloves
  • Tiny cherry tomatoes – 6-10 depending on size
  • 4 Sprigs Fresh Thyme or Rosemary – about 3” in length
  • 1 Teaspoon Red Pepper Flakes
  • ¼ tsp black pepper
  • Extra Virgin Olive Oil

Instructions 

  1. Place items below in a quart jar or container
  2. Cut feta into equal-sized small cubes
  3. Cut green onions thinly
  4. Mince garlic cloves or slice very thin 
  5. Cut lemon in half and thinly slice half
  6. Add tiny tomatoes
  7. Add red pepper flakes
  8. Add sprigs of thyme or rosemary
  9. Add black pepper
  10. Cover the mixture with olive oil
  11. Place lid on jar and gently mix ingredients.
  12. Refrigerate
