Cajunville Chicken Salad

Our favorite farmers market is the Red Stick Farmers Market in downtown Baton Rouge, LA.  Local fresh produce, meats, cheese, eggs, and other products are available year round.  At a recent visit we purchased a chicken, bag of sweet onions, red sweet peppers along with other items.  Once home we decided to use our purchases to make Chicken Salad.  This salad can also be made using leftover chicken.

Chicken Salad

  • 2 cups chunked roasted Chicken
  • 1 cup sweet onion sliced thin
  • ¼ cup red sweet pepper sliced thin

Dressing

  • ¾ cup mayonnaise
  • 1 tsp dill
  • ½ tsp lemon juice
  • 1 tbl capers, drained

Combine chicken, onion, and sweet pepper and toss.

Prepare dressing in separate bowl.  Mix mayonnaise, dill, and lemon juice then fold in capers.

Fold ½ of the dressing into the chicken mixture.  Add additional dressing for your taste.

I did not add salt or pepper since the chicken was seasoned.

Chill salad.

Makes 4 servings.

The salad may be served in various ways.

Place a slice of Rosemary Lemon Bread on a plate, top with a slice of tomato, then add ¼ of salad on top.  Garnish with Dill and Paprika.

Slice ½ tomato, fan out on a plate.  Add six asparagus spears.

Place ¼ of salad with vegetables.

Refrigerate any leftover dressing.  The dressing is great on tomato salads, salmon, or sandwiches.
