Cajun French: le saumon (lu sō-mon) – salmon

 

It is Thanksgiving morning and since we are pescatarians no turkey is in the oven. We are having a laid back morning; coffee and scones in bed. And now it is breakfast time – what is in the frig? What started out to be a mushroom omelet with salmon on the side turned into a wrap with lots of raw vegetables. This is a breakfast for any holiday.

Stuffed Creole Tomato

What is a Creole Tomato?

A true Creole Tomato is grown in the river parishes south of New Orleans.  The soil and the climate make the tomato a “Creole”.   The tomato is meaty, juicy, thick and a delicacy in south  Louisiana.  Nothing announces summer like
the Creole Tomato and snowballs.  Locals  wait for each to “come in season”.

We purchased Creole Tomatoes at the festival and have enjoyed them all week.  Now we are down to our last big plump juicy delicacy – what to do with it?  We decided to make a tuna salad and stuff the tomato which is large enough to share.

Salmon Canape

Party Time!

We have a group of friends who enjoy wine tastings.  Every few months we gather at someone’s home to party and taste wine.  Last week was
the annual event at Steve and Diane’s with Steve preparing the main dishes and everyone else bringing compliments.

We took our basic dressing and added to it and made a Salmon Spread for toast rounds.

Cajunville Chicken Salad

Our favorite farmers market is the Red Stick Farmers Market in downtown Baton Rouge, LA.  Local fresh produce, meats, cheese, eggs, and other products are available year round.  At a recent visit we purchased a chicken, bag of sweet onions, red sweet peppers along with other items.  Once home we decided to use our purchases to make Chicken Salad.  This salad can also be made using leftover chicken.
