Salmon Canape

Party Time!

We have a group of friends who enjoy wine tastings.  Every few months we gather at someone’s home to party and taste wine.  Last week was
the annual event at Steve and Diane’s with Steve preparing the main dishes and everyone else bringing compliments.

We took our basic dressing and added to it and made a Salmon Spread for toast rounds.

Salmon

  • 4 oz smoked Salmon, coarse chop
  • ¾ cup mayonnaise
  • 1 tsp dill
  • 2 tsp lemon juice
  • 1 tbl capers, drained
  • 1/4 cup red onion, chopped fine
  • 1 tbl creole mustard
  • Tabasco to taste

Mix all ingredients except Salmon.  Fold in Salmon.  Chill.

Toast

One loaf of French bread sliced in ¼” slices.

Brush each slice with olive oil and sprinkle with dill.  Heat in a 300 degree oven until toasted to desired crunchiness.  Cool.

Spread salmon on cooled toast.  Garnish each round with capers.
