Banana Nut Bread Muffins

We had bananas that were getting over ripe and in our opinion are only good to use in cooking.  Always wanting to experiment with whole wheat flour and baking, we decided to try Banana Nut Bread.  Once again, we used honey and applesauce instead of sugar and oil.  Instead of a bread loaf, muffins were baked.  They are dense yet not real heavy nor very sweet.

The muffins are great for breakfast or as a dessert.  As a dessert serve with fresh fruit.

Banana Bread Muffins

  • ½ cup unsweetened applesauce
  • ¾ cup honey
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 1 cup mashed bananas – 2 bananas
  • 1 ¾ cup whole wheat flour
  • ½ tsp salt
  • 1 tsp baking soda
  • ¼ cup hot water
  • ¾ cup chopped pecans (walnuts or other nuts may be substituted)

Preheat oven to 350 degrees.

In a large bowl, blend applesauce and honey.  Add beaten eggs and mix well. Mix in bananas, vanilla, and cinnamon.  Mix flour and salt, add to liquid mixture and blend well.

Combine baking soda and hot water.  Stir until soda is dissolved. Blend into muffin mixture.

Fold in chopped nuts.

Place foil muffin cups in muffin tin, fill cups ¾ full.  Bake for 15-20 minutes.

Serving Suggestion:  Slice muffin into thirds and toast.  Spread each round with peanut butter.  This is a great snack or addition to breakfast.

 

Cool in muffin tin for approximately 5 minutes.  Remove foil cups from muffins and finish cooling on wire rack.

Make approximately 12 muffins.
