We have been preoccupied with water lately; namely the “Mighty Mississippi”. Living five houses from the levee in south Louisiana makes us quite aware of the rising water. None the less, life goes on and cooking continues.
Today at the Farmers Market, blueberries and strawberries abounded. We had pancakes on our mind as we headed home from the market. Once again, we used Bruce’s Sweet Potato Pancake mix and fresh berries.

- 1 cup Bruce’s sweet potato pancake mix
- 1 egg, beaten
- 1 cup Almond Vanilla Milk
- 1-2 cups fresh blueberries
- 6 fresh strawberries
- Olive Oil
Combine pancake mix, beaten egg, and milk; mix well.
Grease cast iron griddle or other heavy griddle with olive oil and heat to medium heat.
Pour batter on griddle, place blueberries on batter and cook till set. Flip pancake and cook until
done.
Fan cut four strawberries.
Place two pancakes on plate and garnish with two fan cut strawberries and one whole strawberry.
John ate his with honey and Laurie ate hers with no topping.
Heating the blueberries brought out the sweetness and combined with the sweet potato was fantastic!
