Cajunville Shrimp & Corn Fritter

Cajun French: la chevrette (la shuv-ret) – shrimp

Cornbread is a staple in south Louisiana. Anytime there are greens cooking, cornbread will be baking. We’ve taken cornbread and stepped it up to dinner party status. Our pantry always has a box of Jiffy Corn Muffin Mix, it’s easy, quick and good. So this recipe uses the mix with much added flavor.

Ingredients: 6 servings 4 fritters per serving

Fritters:
1 pkg. “JIFFY” Corn Muffin Mix
2 eggs
2 Tbl onion, diced small
2 Tbl red bell pepper, diced small
1 tsp minced garlic
1 can (8¾ oz) whole kernel corn, drained
1/4 cup sour cream
1/2 tsp cajunville seasoning
⅛ tsp cayenne pepper
1/2# small size shrimp, cut approximately ½” pieces
1 tsp cajunville seasoning
oil for frying
Garnish with green onion

Creole Sauce:
1/2 cup mayonnaise
1 small tomato, seeded and chopped
1 clove garlic, chopped
1 tablespoons Creole mustard
1/2 teaspoon Cajunville seasoning

Salad and Vinaigrette:
2 cups mixed greens (your choice)
3 tsp olive oil
¾ tsp cane vinegar or other mild vinegar
½ tsp creole mustard
¼ tsp salt
¼ tsp black pepper

Directions:

Fritters:

Season shrimp with 1 tsp Cajunville seasoning
Set aside
Beat 2 eggs
Add ¼ cup sour cream
Whisk together
Add: 2 Tbl diced onion
2 Tbl diced red bell pepper
1 tsp minced garlic
½ tsp cajunville
⅛ tsp cayenne
Mix well
Add: sm can (8.75 oz) drained corn
Shrimp
Combine
Add: 1 box Jiffy Corn Muffin Mix
Fold together until all mix is incorporated
Do not over mix
Let sit for 10-15 minutes
Heat skillet to medium high
Add oil – 1-2 Tbl depending on size of skillet
Using small scoop or tablespoon
Drop batter into skillet
Smooth batter out
Fry 3 minutes on each side – golden brown
Remove and place on paper towels

Creole Sauce:

1 small tomato – seed and chop
Add to blender
Add: ½ cup mayonnaise
1 clove chopped garlic
1 Tbl Creole mustard
½ tsp Cajunville seasoning
Blend until smooth

Salad Dressing:

To jar or bowl
Add: 3 Tbl olive oil
¾ tsp cane vinegar
½ tsp creole mustard
¼ tsp salt
¼ tsp black pepper

Cover jar and shake well or whisk in bowl
Set aside
Dress Salad just before serving

Plating:

Place salad to side of plate
Make sauce fancy
Place fritters on sauce
Garnish with green onions
