Cajun French: le saumon (lu sō-mon) – salmon
Salmon en Croute is the perfect dish for any holiday table. In fact, it is the perfect dish for any gathering. This is an elegant yet easy dish to prepare. en Croute means in crust and the salmon is wrapped in puff pastry.

Ingredients (2 servings):
1 box puff pastry sheets
2 – 4 oz skinned salmon filets
4 oz fresh baby spinach, stems removed (optional) & sliced in ribbons
1 lg clove garlic, sliced thin
½ sm red onion, sliced thin
1 Tbl olive oil
Cajunville seasoning
2 oz feta cheese
1 egg
Olive oil non stick cooking spray
Flour
Equipment:
10”-12” cast iron skillet or other heavy skillet
Cutting board
Sharp knife
Cooking spoon
Rolling pin
Metal spatula
Parchment paper
Baking pan
Sm bowl
Brush
Sm whisk
Directions:
Heat skillet to medium low
Season salmon with Cajunville seasoning
Add 1 Tbl olive oil to skillet
Sauté garlic & onion in olive oil until soft
Add spinach, season with Cajunville Spinach
Wilt spinach
Turn off & cool
Spread out a piece of puff pastry on floured surface & roll out thinner
Place seasoned salmon on pastry
Add spinach on top
Top spinach with crumbles of feta
Cut top and bottom of pastry to fit fish.
Cut approximately ½” strips from edge of fish to end of pastry
Lattice pastry over fish
Break large egg, add 1 Tbl water and beat
Brush with egg wash
Place on greased parchment paper
Bake @ 400 conventional, 375 convection 15-18 min until pastry is brown
Remove from oven
Let stand for 3 minutes before serving
