Breakfast Pita Sandwich

Cajun French: la tomate (la tō-mat) – tomato

 

This breakfast started out as eggs and avocado. Sounds good yet could be boring so we started building a breakfast sandwich. First the pita bread, then the tomato and finally the mushrooms. Mayonnaise was added for flavor and then grapes for garnish. It is fun to build a sandwich without really knowing what the final product will be. Building this sandwich is what makes cooking together fun!

Thanksgiving Stuffed Flounder

Cajun French: le plie (lu plee) – flounder

 

Thanksgiving will be our first holiday since we became pescatarians. Not having turkey does not bother us, yet we were trying to decide what to prepare that would make a great presentation. We purchased a 2# flounder from the Anna Marie at the Red Stick Farmers Market and it was a beautiful fish. Stuffing the flounder was fun since as usual it was a building process. Once stuffed, we realized this was the perfect Thanksgiving dish. Now we are hoping that Melissa from the Anna Marie will have another beautiful founder for us to stuff for Thanksgiving.

Veggie Omelet

Cajun French:  l’omlette (l’om-let)  –  Omelet

 

Making breakfast special is a great way to start the day.  How about a double mushroom omelet – mushrooms on the inside and mushrooms for garnish?  We had both  baby portabella mushrooms and button mushrooms and decided to use both in different ways.  Adding peppers, onions, and garlic gave this omelet a special flavor.

Bloody Mary Brunch

Cajun French: déjeuner (dā-ju-nā) – breakfast

 

 

Okay, so we are not having just Bloody Marys for brunch but they sure make preparing brunch more interesting.

It’s the 4th of July and we were being very lazy just enjoying the morning.  After drinking more coffee than anyone should, it was time to think about food.  Opening the fridge and taking lots of items out, what the heck go for the Bloody Marys.  Now with drink in hand, we decided to fix eggs with everything taken out of the fridge.

Cracked Wheat Burgers

Cracked wheat is high in fiber and health benefits and great for any diet.

Always being on the lookout for new items or new ways to use various ingredients, cracked wheat came to mind for our bean burgers.  Although this is not a new way to use cracked wheat, for us it is new.  The cracked wheat gave the burgers a nutty crunchy taste and we liked it.  The dish has firmness and weight, definitely is filling.

Basil Gone Wild

Basil gone wild!

Our basil plant is growing as fast as we can use the leaves.  Knowing basil is high in Vitamin K and also has a great flavor, we try to use it as often as possible.  Having fresh mushrooms and planning an egg dish, the basil was calling to us.  We also had fresh sweet potato bread from Forte Grove at the Red Stick Farmers Market and it would enhance the eggs.

The breakfast is very simple yet very gourmet.
