Cajun French: le chou (lu shoo) – cabbage

 

This week at the Red Stick Farmers Market, we purchased a bunch of Chinese Cabbage leaves. The leaves were to be used as wraps; we just were not sure for what. Waiting for inspiration we placed the leaves a glass of water adding beauty and freshness to our counter. While preparing Sunday breakfast, the leaves were calling and wraps were beginning. Just wilting the leaves adds a nutty flavor to the wraps.

Breakfast Pita Sandwich

Cajun French: la tomate (la tō-mat) – tomato

 

This breakfast started out as eggs and avocado. Sounds good yet could be boring so we started building a breakfast sandwich. First the pita bread, then the tomato and finally the mushrooms. Mayonnaise was added for flavor and then grapes for garnish. It is fun to build a sandwich without really knowing what the final product will be. Building this sandwich is what makes cooking together fun!

Locavore Roasted Corn and Sweet Potato Galette

Cajun French: saler (sa-lā) — salt

 

Choosing to be Locavores makes us very aware of food seasons. Each season has its specialties and none more so than Fall in South Louisiana. Last week we purchased sweet potatoes, garlic, and ears of corn. One morning we had eggs with mushroom and corn. While enjoying breakfast, John stated tomorrow we would fix sweet potato galettes. The recipe below is the new and improved version 2.0, as one of our food testers (Matt, twitter.com/@othermattreed) named it.

Veggie Omelet

Cajun French:  l’omlette (l’om-let)  –  Omelet

 

Making breakfast special is a great way to start the day.  How about a double mushroom omelet – mushrooms on the inside and mushrooms for garnish?  We had both  baby portabella mushrooms and button mushrooms and decided to use both in different ways.  Adding peppers, onions, and garlic gave this omelet a special flavor.

Iko Iko Jockamo Breakfast

Cajun French:  la patate douce (la pa-tat doos)  –  sweet potato

 

Abita Jockamo IPA (India Pale Ale) is an excellent beer,  reminding us of the many European beers we enjoyed while living in Germany.  Although we enjoy beer, it is not something we drink every day.   Yet somehow we always seem to have various types in the refrigerator mainly due to friends bringing over beer and leaving what’s left in our fridge.  Finding Jockamo IPA, we decided to give it a try with Bruce’s Sweet Potato Pancake Mix and it was a great marriage.

“Jockamo is named for the tribes of dancing, singing, chanting “Mardi Gras Indians” who have marched in New Orleans for over 250 years.”   When you taste this dish you will hear the drums and start singing “Iko! Iko!…Jockamo feena nay”.

Cajun Beer Sweet Potato Biscuits with Poached Eggs

Cajun French: la bière (la bee-air) – beer

 

Beer Biscuits had been on our list of things to make and we decided to make it Cajun – Abita Beer and Sweet Potato Biscuits!

Ok, that settled now how to serve the biscuits – with poached eggs.  Ok, we need more than just eggs.  We decided to jazz it up with fresh lump crabmeat and a lemon dill sauce.

This dish could not only be served for breakfast but also for brunch.

Simple Combinations: Eggs and onions

Cajun French:  l’oignon (l’on-ee-on) – onion

 

Sometimes we try to make things too complicated by using many and varied ingredients.  We are trying to make some of our recipes simple, easy, quick and healthy.  So began “Simple Combinations”, where we use two to three ingredients for the main item.  It is easy to add fresh fruit, bread and/or fresh vegetables.

Here is another “Simple Combination” using eggs and Creole onions to make a quick and healthy meal.  Chopping the onion takes the longest amount of time.  While the onions are cooking, slice the tomato and cut fresh fruit.  The sweetness of the cooked Creole onions along with fresh eggs, both from the Red Stick Farmers Marekt, made an incredible combination.

Bloody Mary Brunch

Cajun French: déjeuner (dā-ju-nā) – breakfast

 

 

Okay, so we are not having just Bloody Marys for brunch but they sure make preparing brunch more interesting.

It’s the 4th of July and we were being very lazy just enjoying the morning.  After drinking more coffee than anyone should, it was time to think about food.  Opening the fridge and taking lots of items out, what the heck go for the Bloody Marys.  Now with drink in hand, we decided to fix eggs with everything taken out of the fridge.

Simple Combinations: Eggs and Peppers

Cajun French:  le piment doux (lu pee-mon doo) – Sweet Pepper

 

This morning was one of those mornings where the time got away from us and still no breakfast – so began “Simple Combinations”.  We will take 2 or 3 ingredients and make a quick, healthy, pleasing meal.  Meals are meant to be enjoyed with family and friends even with our hectic schedules.  So this morning we grabbed eggs and a variety of peppers from the refrigerator and began.
