Cajun French: la poire (la poo-ar) – pear
Finding fresh fruit at farmers markets is a treat. Today we had our choice of various apple varieties and pears. Of course we went home with some of each. Poaching pears in a wine sauce has been something we have wanted to do for quite some time. So pears were on the menu for tonight. We did it and yes, they were delicious…
This is an elegant yet easy dessert…

Ingredients:
2 pears
3 cups red wine
1 cup raw sugar
2 tbl lemon juice
Dash of salt
Peel and core pears from bottom, leaving stems attached
Combine wine, sugar, lemon juice, and salt
Mix well
Bring to a boil and dissolve sugar
Lower to simmer
Place pears in wine mixture and simmer until tender
Time will vary depending on ripeness of pears
When pears are tender remove and stand upright on a plate
Reduce wine mixture until thicken
Plate:
Place pears on plate stem up
Spoon wine sauce over pears – approximately 3-4 tbl
Garnish with grated cheese, chocolate or both
