Third Day of Christmas – 3 Stuffed Shrimp

Cajun French: bourrer (boor-ā) – to stuff

 

On the third day of Christmas, my true love gave to me three stuffed shrimp.

Shrimp are a staple in the Cajun diet and we eat them in various ways at least three times a week. Stuffed shrimp is a favorite of ours and our recipe is baked not fried. We do not put any coating on them and use more crab than bread for our stuffing.

Ingredients:

  • 12 shrimp
  • 1 med onion chopped fine
  • 3 cloves garlic chopped fine
  • 4 mushrooms chopped fine
  • 1/2 cup bread crumbs
  • 1 egg
  • 1 cup crabmeat
  • Salt
  • Cajun seasoning
  • 2 Tbl Olive oil

Heat oven to 350 degrees

Stuffing:

Heat olive oil to medium in cast iron skillet.

Sauté onion and garlic until tender adding a pinch of salt.

Add mushrooms and continue cooking until mushrooms are tender adding a pinch of salt.

Pour mixture in large bowl and add bread crumbs; mix well.

Taste for seasonings and add Cajun seasoning to taste.

Beat egg and add to bread mixture combining well.

Fold in crabmeat, so as not to break up.

Shrimp:

Peel, clean, devein, and butterfly shrimp.

Cut butterfly deep enough so the shrimp will sit flat.

Place shrimp butterfly down, tail up.

Place heaping tablespoon stuffing on flat shrimp and shape.

If shrimp tail falls to side of shrimp, place the tip of the tail into the stuffing.

Because shrimp only cook a few minutes use a heavy baking pan such as a cast iron skillet or heavy steak plate.

Heat cooking pan to temperature, remove from oven and brush with olive oil.

Place shrimp in cooking pan and return to oven.

Bake shrimp at 350 degrees for 5-10 minutes; until shrimp are pink and stuffing heated through.

  1. This is a delicious reminder that this dish has been missing from my diet for far too long. I rarely get to eat at any seafood restaurants here in Central Texas, so it is nice to come across a recipe that I can make at home. It may call for a trip to the specialty grocery store, however I believe it will be well worth it.
