Cajunville Party Salad

An invitation to a Pot Luck, Party, or Get Together, what to bring?  A Party Salad of course!  Are you looking for something easy, different, interesting and delicious?  Our Party Salad is that and more.  This salad will awaken your smell, entice your taste, and color your palate.

This dish is great to keep in the frig for snacks, serve when friends drop over, and it is the perfect side for most entrees.  And to top things off – it is easy to prepare.

Party Salad

  • 1 – 14 oz can Shoepeg Corn drained
  • 1 – 16 oz can French Style Green Beans drained
  • 1 – 16 oz can Petit Bois Peas drained
  • 1 2oz jar Pimentos
  • 1/2 cup Celery thinly sliced
  • 1/2 cup Red Onion thinly sliced
  • 1/2 cup Bell Pepper thinly sliced, any color or a combination

Marinade:

  • 1/2 cup raw sugar (Splenda or other bulk sweetner may be used)
  • 1/2 tsp pepper
  • 1 tsp salt
  • 2 oz Olive Oil
  • 3 oz Cane Vinegar (or vinegar of your choice)

Combine vegetables in large bowl. Make the size of the vegetable slices to your liking.

Using a small saucepan, combine marinade.  Bring to boil over low heat stirring occasionally.  (Once it boils, I boil it hard for about 30 to 40 sec)  When using Splenda, whisk to aid in dissolving the Splenda.  Pour hot marinade over vegetables.  Stir gently.  Cover chill for 24 hours.  Drain before serving.

Depending what type of corn I can find, I will sometimes use Mexican Corn or some combination of corn.  Make sure you use small sweet peas otherwise the taste of green peas is overpowering.

This recipe is easily doubled.

Serve in a clear bowl to show off the colors.
