Grilled Shrimp and Sweet Potato Fingerlings

Cajun French: le vinaigre (lu veen-eg) – vinegar

 

This is a simple and quick grilling recipe that is full of flavor. The balsamic vinegar adds sweetness to the shrimp and complements the sweet potatoes. We eat plenty shrimp and are always looking for new ways to cook shrimp. Although grilling is not new, the addition of balsamic vinegar is a new twist in preparation.

The sweet potato fingerlings were a find at the Junction City, KS Farmers Market.  We have used potato fingerlings yet had never seen sweet potato fingerlingers.  The fingerlingers were great for grilling, were sweet and complemented the shrimp perfectly.

Abita Beer Cobbler

Cajun French:  la peche (la pesh)  –  peach

 

The fridge is still over stocked with beer and we are having fun cooking with the beer.  Having some fruit that needed eating, we decided to make cobbler.  We usually use premade pie crust for our cobbler and finding none the imagination kicked in.  Sweet Potato Biscuits, why not use the batter for the cobbler topping? And why not use beer for the liquid?  Why not for sure; it is fantastic!

Iko Iko Jockamo Breakfast

Cajun French:  la patate douce (la pa-tat doos)  –  sweet potato

 

Abita Jockamo IPA (India Pale Ale) is an excellent beer,  reminding us of the many European beers we enjoyed while living in Germany.  Although we enjoy beer, it is not something we drink every day.   Yet somehow we always seem to have various types in the refrigerator mainly due to friends bringing over beer and leaving what’s left in our fridge.  Finding Jockamo IPA, we decided to give it a try with Bruce’s Sweet Potato Pancake Mix and it was a great marriage.

“Jockamo is named for the tribes of dancing, singing, chanting “Mardi Gras Indians” who have marched in New Orleans for over 250 years.”   When you taste this dish you will hear the drums and start singing “Iko! Iko!…Jockamo feena nay”.

Cajun Beer Sweet Potato Biscuits with Poached Eggs

Cajun French: la bière (la bee-air) – beer

 

Beer Biscuits had been on our list of things to make and we decided to make it Cajun – Abita Beer and Sweet Potato Biscuits!

Ok, that settled now how to serve the biscuits – with poached eggs.  Ok, we need more than just eggs.  We decided to jazz it up with fresh lump crabmeat and a lemon dill sauce.

This dish could not only be served for breakfast but also for brunch.

Grandma’s Potato Croquettes

Cajun French:  la patate douce (la pa-tat doos) – Sweet Potato

Many years ago John‘s grandmother owned a General Store across from the school in Port Allen, LA.  This was before school cafeterias and Francis would make hamburgers at lunch for the students.  Since most of the students were Cajun Catholics, on Fridays she would make Potato Croquettes using fish flakes.  Francis, the below recipe is in your honor, we hope we make you proud.  The below recipe has been updated using sweet potatoes and salmon.

Blueberry Sweet Potato Pancakes

We have been preoccupied with water lately; namely the “Mighty Mississippi”.  Living five houses from the levee in south Louisiana makes us quite aware of the rising water.  None the less, life goes on and cooking continues.

Today at the Farmers Market, blueberries and strawberries abounded.  We had pancakes on our mind as we headed home from the market.  Once again, we used Bruce’s Sweet Potato Pancake mix and fresh berries.

Sweet Potato Pancakes

Sweet Potatoes are a staple for Thanksgiving and Christmas dinners.  Sweet Potatoes and Yams are abundant in south Louisiana and they are used in a variety of ways all year.  Sweet potato hash browns, bake sweet potatoes, sweet potato salad, and sweet potato fries are just a few ways of using sweet potatoes or yams.

We have used left over baked sweet potatoes to make pancakes and biscuits.  Now we have an easier way – Bruce’s Food in New Iberia, LA has a Sweet Potato Pancake and Waffle Mix available.  The mix is complete meaning just water is added.  Instead of water, we decided to add egg and milk.  The below recipe is the result of our experimenting.
