Grilled Shrimp and Veggie Omelet

Cajun French:  le jardinage (lu jar-deen-aj) – vegetables

 

Having grilled shrimp and sweet potato fingerlings left over, our creativity kicked in for breakfast.  Individual grilled shrimp omelets adding mushrooms, peppers, garlic, and onions sounded good.  Out came the Griddler and we started chopping.

Ingredients:

  • 2 eggs
  • 8-12 grilled shrimp, tails off
  • 1 red banana pepper
  • 4 sm creole red onions
  • ½ jalapeno pepper
  • 1 large garlic clove
  • 8 grilled sweet potato fingerlings
  • Bread
  • Olive oil
  • Cajun seasoning
  • Salt

Heat griddle to 350 – 450 degrees.

Chop banana pepper, Creole onions, jalapeno pepper and garlic.

Pour a small amount of olive oil on griddle.

Place chopped vegetables on griddle and cook until tender.

 

Chop shrimp into 1/3s.

Place in bowl and set aside.

 

Coarse chop sweet potato fingerlings.

Heat sweet potatoes on other side of griddle.

 

Brush slices of bread with olive oil.

Season bread with Cajun seasoning.

Heat bread with sweet potato fingerlings.

When sweet potatoes and bread are heated remove from griddle.

Keep warm.

 

For each omelet:

Pour ½ tsp olive oil on griddle and heat.

Beat 1 egg, pour on heated grill spreading out evenly.

Season egg with salt and Cajun seasoning.

Place one half of shrimp and vegetables on one side of egg.

Once egg is set, fold over side onto vegetables and shrimp.

Slide onto plate.

 

Serve with sweet potato fingerlings and toast.

  1. Mm Mmmm does that ever sound good! Did you cook that in your RV? I can’t wait to be preparing meals in our new RV on a full time basis. People don’t realize that it is just as easy to make delicious meals in a small galley as it is in a big kitchen. In fact sometimes it’s less tiring because you have less walking around.

    1. Thanks for the comment. This dish was cooked outside using a Griddler. We cook out as much as the weather will allow. You are correct about cooking inside an RV. We have cooked some fantastic meals in the RV and wowed friends. Cooking isn’t so much about facilities yet more about having fun and enjoying the process.
