Sweet Potato Pancakes

Sweet Potatoes are a staple for Thanksgiving and Christmas dinners.  Sweet Potatoes and Yams are abundant in south Louisiana and they are used in a variety of ways all year.  Sweet potato hash browns, bake sweet potatoes, sweet potato salad, and sweet potato fries are just a few ways of using sweet potatoes or yams.

We have used left over baked sweet potatoes to make pancakes and biscuits.  Now we have an easier way – Bruce’s Food in New Iberia, LA has a Sweet Potato Pancake and Waffle Mix available.  The mix is complete meaning just water is added.  Instead of water, we decided to add egg and milk.  The below recipe is the result of our experimenting.

Breakfast Sweet Potato Pancake Tarts

  • 1 cup Bruce’s Sweet Potato Pancake & Waffle Mix
  • 1 egg
  • 1 cup Silk Vanilla Soy Milk
  • 1/3 cup chopped pecans (or other nuts)
  • 1 blood red orange, chopped
  • 1/2 apple, chopped
  • 6 strawberries, chopped
  • 12 blueberries
  • Honey
  • Olive Oil

Batter:

Mix together pancake mix, beaten egg, soy milk until well blended.  Fold in pecans and let batter sit while chopping fruit.

Fruit Mixture:

We try to use as many local fruits as possible.  These included blood orange, strawberries, blueberries, and blackberries.  We used the
blackberries strictly for garnish – one big one on top of the tower.  You can chop the fruit as large or small as you like.  Just make sure the fruit are approximately all the same size.

Peel, core, and chop orange and apple; quarter strawberries.  Add 1 tbl honey to fruit and mix.  You should have approximately 2 cups of fruit.

Heat greased cast iron griddle or other heavy skillet to medium low.  Using egg rings, place two or three on griddle, fill rings until batter is even and skillet is coated.  Let batter set, then remove ring and cook like normal pancakes.  If you have no rings, use a ladle to make sure each cake is the same size.

Once cakes are cooked, place one in the center of a plate, spread honey on cake and top with fruit, repeat with a second cake.  Drizzle honey over cake tower and plate.  Place a blackberry on top and serve.

If you do not like honey, syrup can be used.  Spreading honey on the cake helps the fruit to stay in place.
