Cajunville Shrimp Rice Bowl

Cajun French: le riz (lu ree) – rice

The ultimate Cajun comfort food, at least for us. When we aren’t sure what to cook, a rice bowl is always our option. This one has sauteed shrimp and various vegetables. This recipe is easy, fairly quick and oh so satisfying. The recipe can be made with any protein and vegetables. It is also good as a vegetarian dish.

Ingredients:
1# medium shrimp, peeled & deveined – 51/70 count
1 cup raw rice
2 ½ cups vegetable stock or water
Olive oil
¼ cup sliced garlic
2 cups sliced onions
1 cup sliced red bell pepper
1 cup sliced orange bell pepper
5 oz sliced mushrooms
½ cup sliced green onions
5 oz broccoli florets, cut bite size
⅔ cup chopped carrots – any color
Worcestershire sauce
Cajunville seasoning
Salt
Sesame oil – optional

Equipment:
Cutting board
Sharp knife
Small sharp knife for deveining shrimp
Mise en Place bowls
Measuring Cups
Measuring Spoons
Cooking spoon
Tasting spoon
Deep skillet with lid – about 3” deep
Rice pot with lid
Bowl for cooked shrimp
Bowls and utensils

Instructions:
Fill rice pot with 2 cups liquid
Add chopped ⅔ cups carrots
Cover and bring to a boil

In a bowl place
1# medium shrimp, peeled & deveined
1 Tbl olive oil
1 Tbl Cajunville seasoning
Stir to coat and set aside

When liquid boils
Add 1 cup raw rice
Stir, cover and bring back to a boil
Once boiling, stir, cover, bring to simmer and set timer to 15 minutes
After 15 minutes turn off heat, crack top and steam for 10 minutes

Heat skillet to med high
Add 1 Tbl olive oil
When skillet is heated add shrimp
Cook to just pink
Remove from skillet
Place in bowl and cover
Set aside


To skillet
Add 1 Tbl olive oil
Add 2 cups onions
Add ¼ tsp Cajunville seasoning
Stir and cover
Check onions in 5 minutes
Add about 1 tsp liquid
Stir and cover
Repeat until onions are caramelized – about 20 minutes
Add bell pepper and garlic
Add ¼ tsp Cajunville seasoning
Saute for about 5 minutes
Push mixture to one side of skillet
Add 2 cups mushrooms to other side
Spread out mushrooms
Let mushrooms cook for about 1 minute
Add ¼ Cajunville seasoning
Cover for about 2 minutes
Uncover and combine everything together
Cook for about 3 minutes
Add 2 cups broccoli florets
Add ¼ tsp Cajunville seasoning
Combine and cook for about 3 minutes
Add 1 tsp Worcestershire sauce, combine
Taste for seasoning; adjust if necessary, add salt if necessary
Add shrimp and liquid
Combine
Add ½ cup green onions
Combine and serve
Drizzle sesame oil over shrimp rice, do this lightly (optional)

Note: vegetables other than onions are cooked to al dente, there is still a bite. Adjust cooking to suit your taste.
