Almond Croissants

The Holidays are near and this is perfect for holiday entertaining and gifting. This recipe was given to us by John’s sister, Suzanne, and of course we had to add the Cajunville touch to it. This recipe may become a holiday tradition for you and your family.

Ingredients:

1 bag premade mini croissants (about 20)

7 Tbl butter

½ cup sugar

1 cup almond flour

1 Tbl all purpose flour

Pinch of salt

1 egg

1 tsp pure vanilla extract

1 tsp pure almond extract

8-12 oz sliced almonds

Powdered sugar for sprinkling

Heat Oven – convection oven to 325 or conventional oven to 350

Soften butter

Combine butter & sugar

Add salt and flours

Mix until incorporated and smooth

Add egg, vanilla & almond extract

Mix until well combined

Cut Croissants in half lengthways

Spread a layer on croissant bottom, about 1 tsp

Place croissant top on

Spread mixture on top

Cover top with almonds

Place on baking sheet lined with parchment paper

Bake for 15-20 min (we bake for 15 min)

Remove from oven and place on cooling rack

Sprinkle powdered sugar over top of croissants
