Cajun French: la dépense (la dā-pons) – pantry
Vodka sauce sounds so romantic and enticing. Each time the pantry was opened the vodka sauce was staring at us. Four large mushrooms, two stuffed crabs and vodka sauce, dinner was in the making. Add seasoning and pasta and the romance was waiting.

Ingredients:
Olive oil
1 onion
1 small sweet pepper
4 cloves garlic
7 small mushrooms
½ tomato
24 oz Vodka Sauce
2 stuffed crabs
4 large mushrooms
Salt
Cayenne pepper
2 tsp Sweetener (Splenda, sugar, etc.)
5 oz pasta
Slice onion, pepper, garlic, and small mushrooms
Chop tomato
Heat 1 Tbl olive oil to medium in cast iron or other heavy skillet
Sauté sliced vegetables until tender
Season to taste with salt and cayenne pepper
Add vodka sauce and 2 tsp sweetener, mix well
Cook on medium low until thick, stirring occasionally
Take stems out of large mushrooms
Grease mushrooms with olive oil
Season with salt and cayenne pepper
Split stuffed crabs into four equal parts
Stuff mushrooms with crab
When sauce has thickened, turn off heat
Place mushrooms in sauce
Bake in a preheated 350 degree oven for 30 minutes
Cook pasta according to package directions
When cooked reserve ½ cup cooking liquid
Drain pasta and return to pot
Drizzle with olive oil and mix
Plate:
Place a bed of pasta on plate
Put sauce on pasta
Top with stuffed mushroom
Serve and enjoy!
