Cajun French: la prune (la prūn) – plum
Most of our recipes are made from “starch”, but sometimes we have prepared items that must be used. We do not like to throw out anything including prepared foods. In walks Pesto and we must use it somehow, somewhere, in something, etc. The pesto had already been used on pizza, but we still had half a bottle left. Shrimp was on the menu and the pesto became a marinade. The blending of flavors became a simple supper of shrimp with fresh plum and avocado. This is a great summer evening meal!

Ingredients:
- 12 large shrimp, peeled and deveined
- ¼ cup prepared pesto
- Salt
- Camp Dog Cajun seasoning
- Olive oil
- 1 large plum
- 1 avocado
Season shrimp with salt and Camp Dog Cajun seasoning
Marinate shrimp in pesto for at least 30 minutes
Heat 2 tsp olive oil to medium in cast iron skillet
Place shrimp in hot oil and cook until pink
Turn shrimp and cook until done
Remove shrimp from skillet and plate
Another great idea!!! This just proves that pesto goes with anything! 🙂
