What’s for breakfast? If you are like me, you get tired of the egg, bacon, and toast or some variation thereof; we have a treat for you. Really, our Pancake Torte will put a smile on anyone’s face. This easy breakfast dish, which could also be a dessert, will dress up any breakfast.

2 cups pancake mix
1 ½ cups milk
1 egg, beaten
Mix all ingredients until smooth. Heat griddle to 350 – 375 degrees. Cook pancakes until golden brown on each side.
Make six to eight pancakes per torte. Do not make crepes; a substantial pancake is needed for stacking. Place one pancake on a fancy plate then layer your favorite jelly or jam on the pancake. Continue this until you have six to eight layers. On the top layer, you can keep it simple by dusting with Confectioners’ sugar then a dollop of jam filling.
If you want to make it special, take your favorite fresh fruit, chunk it then cook it down with sugar or splenda. When it becomes thick, spoon it over the torte. Add a dollop of whipped cream and a piece of fruit. To serve, cut like a cake. You can garnish each piece with whipped cream and fruit.
