Jazzed Up Crab

Cajun French:   la crabe (la krab) – crab

 

Des Allemandes Outlaw Katfish Kompany sells stuffed crabs, along with live crabs, soft shell crabs, and catfish, at the Red Stick Farmers Market.  We enjoy making crab cakes yet when the Outlaw Katfish Kompany’s stuffed crabs are available we opt for them.  Each stuffed crab is loaded with crab, seasoning and just the right amount of bread.   We headed home with our usual four stuffed crabs and decided to jazz them up.

Vegetable Bed

  • 1 sm red bell pepper
  • 1 sm yellow bell pepper
  • 1 sm orange bell pepper
  • 2 sm green tomatoes
  • 12 sm leaves kale, sliced
  • 3 Tbl garlic olive oil
  • Salt and pepper

Heat oil in a medium size heavy skillet (cast iron) to medium high. 

Place vegetables except kale in skillet and cook until tender.  Just before vegetables are done add kale, toss and heat until wilted.  Season to taste.

Garlic Toast

  • 6 slices whole wheat baguette
  • Garlic olive oil

Brush bread slices with oil and toast on hot griddle.

Garlic Olive Oil

  • ½ cup olive oil
  • 6 cloves garlic, minced

Place oil and garlic in small iron skillet and heat on low.  Cook until garlic is tender.

Stuffed Crab

Bake Outlaw Katfish Kompany stuffed crabs at 350 for 30 minutes. 

We have made seafood cakes, which would also work great on the vegetable bed.

Plate

Place ½ vegetables on plate.

Place one cooked stuffed crab (out of its holder) on top of vegetables.

Place garlic toast around bed.

Garnish with lemon wedges.
