Cajun French:  la patate (la pa-tat) – potato

 

PlatedPotato Salad – picnics, family dinners, comfort food.  That’s Potato Salad.

How about potato salad with a twist?  Instead of using just white potatoes, include equal amounts of sweet potatoes for a flavor twist.  This is a very fresh tasting salad that pops in your mouth.

We had boiled shrimp that we added to the plate and wow what a meal!

Crabmeat and Pasta

Cajun French:  l’ail (l’a-ee)  –  garlic

 

Having crabmeat and greens in the frig and needing to use them, we decided to put them together and serve with pasta and lots of garlic.  This dish will make everyone smile and go back for seconds and thirds.  The dish could be turned into a casserole and would be great for a pot luck.

Squash Blossoms

Squash blossoms have always been fascinating yet we never experimented with them.  At this week’s Farmers Market the blossoms were in full bloom and were calling to us.  Okay, more to Laurie than John, yet he was on
board to experiment.  Of course, now that we are not eating animal fat, we had to develop a stuffing not using cheese or sausage.  Cajun Jasmine Rice was to be the base of the stuffing, now we needed something to bind it with.  The following recipe is the result of our thinking outside the box.

The process is time consuming although fun when done with another person.
