Cajunville Mardi Gras Corn

This dish is a parade in your mouth. There are a multitude of flavors for your palate to enjoy. It is an easy dish which can be enjoyed as an appetizer, side dish, dip or even a main course. Bring it along for parade watching, tailgating or any gathering. It is easy to make and can be made ahead and refrigerated adding the chips just before serving.

Ingredients:
16 oz frozen corn
½ – t tsp Crab boil liquid
½ – ¾ tsp dry

1 Tbl Olive Oil
½ cup chopped red bell pepper
¼ cup chopped celery
½ cup chopped red onion
2 Tbl chopped garlic
1 cup chopped tasso or andouille or combination of both

¾ tsp Cajunville seasoning`
¼ tsp cayenne pepper
½ tsp Worcestershire

4 oz cream cheese, soften
½ cup sour cream
¼ cup chopped fresh parsley

2 cups crushed Zapps Crawtator chips or other seasoned chips

Green onions for garnish

Directions:
Preheat oven to 350, conventional. 325, convection

Boil 1 cup water
Add crab boil
Add Corn
Cook until boiling, turn off and let sit

Heat 1 Tbl olive oil in cast iron skillet to medium-high heat
Add tasso/andouille, celery, red onion and bell pepper
Cook for 5 minutes, adding garlic at 3 min
Add:
¾ tsp Cajunville seasoning or other Cajun seasoning
½ tsp Worcestershire
¼ tsp cayenne
Mix well
Add cream cheese, stirring until melted
Remove from heat
Add sour cream and parsley
Drain corn and add to mixture
Combine well
Taste for seasoning, add any if necessary
Layer top with crushed potato chips
Bake 15-20 minutes or until heated through
