Cajun French: le grue (lu grū) – grits

Shrimp & Grits is a south Louisiana favorite whether you are in Cajun Country or New Orleans. Our dish comes from Cajun Country with the added flavor of Andouille. Elegant entertaining or family dinner, shrimp & grits is perfect.

Grits

2 Tbl Butter
½ onion – chopped fine
1 oz Andouille – quartered & sliced about 1/8”
1 lg clove garlic – minced
2 cups broth
½ cup grits – 5 min grits (adjust time if using other types)
¼ cup heavy cream
½ cup grated white cheddar cheese
Cracked black pepper

In a cast iron pot or other heavy pot, melt butter on medium
Saute onion and andouille
Add garlic and bloom
Add 2 cups broth and bring to a boil
Add ½ cup grits slowly to boiling broth while stirring
Cook 7-8 minutes at a hard simmer – medium
Stir occasionally, grits should thicken
Add cream, cook 1-2 minute and taste
Turn to low until desired thickness
Turn off
Stir in cheese
Cover and set aside

Shrimp

2 oz Andouille – chop into crumbles
1# lg shrimp with tails – deveined and butterflied
1 1/2 tsp Cajun or Creole Seasoning
Pinch Cayenne
1 tsp smoked paprika
5 cloves garlic minced
3 Tbl Olive Oil
2 Tbl Butter
¼ cup red bell pepper finely chopped
¼ cup Shallot finely chopped
Salt
¼ cup White wine or stock
Lemon wedge
3 green onions chopped for garnish

In a bowl combine Cajun/Creole Seasoning, cayenne, garlic, paprika and olive oil. Place shrimp in bowl and toss. Set aside.
In a large skillet over medium heat cook andouille until crispy
Remove and drain on paper towel
Add 1 Tbl butter to skillet.
When melted add red bell pepper and shallot and saute until slightly tender (2-3 minutes)
Add wine and cook for 2-3 minutes until most of the wine has evaporated
Add shrimp and marinade to skillet and cook until shrimp are pink, turning shrimp once
Sprinkled lemon wedge over shrimp
Turn off heat

Place grits in plate
Crack black pepper on top
Place 4-6 shrimp tail up on grits
Top serving with skillet drippings
Sprinkle Andouille over
Garnish with sliced green onions
