Cajunville Chicken Salad

Great summer salad! Easy to make and even better the next day. 

Chicken Salad

  • 2 cups chunked roasted Chicken
  • 1 cup red onion sliced thin
  • 1/2 cup red sweet pepper sliced thin
  • Cajun seasoning
  • Cayenne pepper, salt & pepper

Dressing

  • ¾ cup mayonnaise
  • 2 tsp dill, chopped
  • 1 tsp lemon juice
  • 2 tbl capers, drained & rinsed
  • 4 dashes Tabasco or to taste
  • Clove minced garlic

Dressing: Using a medium bowl, combine all ingredients and mix well. If you do not like spicy, start with 2 dashes of Tabasco and add more if necessary. Place Dressing in refrigerator to chill while making the salad.

Salad: Season chicken with Cajun seasoning if necessary. Using a large bowl, combine chicken, red onion and red sweet pepper. Mix well. Pour dressing over salad mixing well. Taste for seasoning. Add Cayenne pepper if more kick is needed; start with a dash. Salt and pepper can also be added if necessary. 

Serving suggestions:

Toast bread, slice of tomato with salad on top

Slice top off tomato, scoop out insides and place salad in tomato bowl

Serve on crackers

Use for a sandwich filling
