Plated with avocadoWalking into Let It Grow in Cortez, CO a combination coffee house, plant nursery, market and café, we saw a large display of dried beans.  Always attracted to beans of every type, we headed over and were amazed with the variety and names.  Colorado River, Zuni Gold, Mortgage Lifter, Anasazi, Pinkeye and Cranberry were just a few of the beans available. Beaumont, TX Farmers Market

Cajun French:  le miel (lu mee-el) – honey


FlowersThe parking area was packed with police directing traffic and volunteers assisting in the parking lot.  The crowd was sometimes three deep and tables hard to see.  This was our introduction to the Beaumont Farmers Market.  In seeking out farmers markets as we RV around the country, Beaumont has an excellent start on a very active local farmers market.  We were impressed both with the produce offered and the local support.  Continue reading “Beaumont, TX Farmers Market”

The Pony Expresso, Dolores, CO

Coffee is embedded in our Cajun Culture.  We spent many an afternoon having coffee with our grandparents and parents.  It was an enjoyable occasion where we discussed the day, learned about our heritage, and looked to the future.  Now as we travel we look for those coffeehouses that give us that afternoon pleasure of fresh coffee and visiting. Joe Momma’s Breakfast Eatery, Eagle, Idaho

EntranceTypical of family gatherings, there is usually too much food and the wedding festivities were no disappointment.  After a week of one meal after the other, we laid off for a day and then just had to push the envelope.  Breakfast is our favorite meal to eat out — we enjoy sitting with a cup of coffee and discussing the goings on and our plans for the next few days. Almond Veggie Rice

Cajun French:  le “spinach” (lu “spinach”) – spinach

 

Plated with Brussel SproutsHaving fresh vegetables that needed cooking, we decided to make Veggie Rice.  Sauté vegetables over rice was the plan but as always the plan evolved.  Rice was cooked with fresh rosemary then combined with the vegetables and almond butter was added.  Wow!  The almond butter added a richness and the aroma made our mouths water.

Nutty Penne

Cajun French:  l’asperge (l’as-pairj) – asparagus

 

Plated with cheeseFresh leeks were in our market basket this week, so we decided to make a dish focusing on the leeks.  At least that is how it started.  The dish evolved to include pine nuts and watercress.  In the end we had a thick sauce to mix with penne, top with cheese and enjoy.

Rice with Broccoli Flowers

Cajun French:  la fleur (la flur) – flower

 

FlowersSaturday morning was stormy which meant the Red Stick Farmers Market would be held in the Galvez Parking Garage.  It also meant there would be fewer farmers at the market due to the weather.  Upon arriving, as we thought there were fewer farmers yet the farmers that were there had an abundance of Spring vegetables.  There was an array of color – yellow squash, zucchini, tomatoes and much more including broccoli flowers.  We enjoy cooking with flowers and had never used broccoli flowers so of course they had to go in our market basket.  We took half the flowers and decided to cook them with rice.  The flowers are delicate and add sweetness to the rice.  We served the rice with our Mustard Tarragon rubbed Catfish.

Mustard Tarragon Catfish

Cajun French:  la moutarde (la moo-tard) – mustard

 

PlatedFresh Louisiana wild caught catfish – nothing like its sweet taste.  We purchased catfish from Outlaw Katfish at the Red Stick Farmers Market and were ready for some of that sweetness.  We wanted to try something different and our herb garden was calling us.  Fresh tarragon and Creole mustard – yes!  We made a paste using the mustard as a base and rubbed one side of the fish.  The fish was served with our Rice with Broccoli Flowers.
