Mustard Tarragon Catfish

Cajun French:  la moutarde (la moo-tard) – mustard

 

PlatedFresh Louisiana wild caught catfish – nothing like its sweet taste.  We purchased catfish from Outlaw Katfish at the Red Stick Farmers Market and were ready for some of that sweetness.  We wanted to try something different and our herb garden was calling us.  Fresh tarragon and Creole mustard – yes!  We made a paste using the mustard as a base and rubbed one side of the fish.  The fish was served with our Rice with Broccoli Flowers.

Stuffed Trumpets

Cajun French: trompette – trumpet

 

What would “swamp pop” music be without trumpets? The horns add a quality that make “swamp pop” a distinctive music. On Saturday night in south Louisiana “swamp pop” music can be found in dance halls and juke joints in most cities and towns.

The oyster mushrooms we purchased at the Red Stick Farmers Market reminded us of trumpets and “swamp pop” music. Wanting to make the mushrooms as distinctive as “swamp pop” we decided to stuff the trumpets. They were served with grilled salmon and grilled asparagus. John said the salmon and asparagus were the accompaniment that the main player was the mushrooms.

Crepes GoYaYa’s

Cajun French: les légumes (lā lā-gūm) – vegetables

 

Baton Rouge, LA. – What happens when a food truck finds a home?  The “streets” loose.  Yet the door is opened to a new customer base enjoying climate controlled seating.  Such is the case with GoYaYa’s, the latest food truck to settle down.  GoYaYa’s found a home at the Main Street Market in downtown Baton Rouge, La.

Catfish Des Allemands

Cajun French:  le goujon jaune (lu goo-jon jon) – catfish (yellow)

 

Sweet and tender catfish come from the Outlaw Katfish Kompany, Des Allemands, Louisiana and we wanted to keep that flavor.  We decided to bake the catfish and serve it on a Cajun Grain Jasmine Rice dish with a citrus topping made with Plaquemines Parish L’Hoste Navel Oranges and Bocage Honey.  These items were purchased from the Red Stick Farmers Market in Baton Rouge, La.

Crab and Shrimp Persimmon Stacker

Cajun French:   la crabe (la krab) – crab

 

 

While reading about Sandy’s RV search in her blog, Food and Fond Memories, she also talked about having a crab, shrimp and avocado stack from Bahama Breeze.  Ok, my mouth was watering and I wanted a stack.  Fast forward to the Red Stick Farmers Market and my mouth still watering.  We chose items to make our stack local: crab, shrimp, persimmons, and greens.  Thanks Sandy!

Red Stick Farmers Market Patriotism

Cajun French:  patriotisme – patriotism

 

The July 2nd Red Stick Farmers Market began this morning with the National Anthem played by a single trumpeter, John Gray.  He began at one end of the market and walked slowly playing the National Anthem to the other end of the market.  Everyone was in awe!

What a way to begin the July 4th Weekend!

Red Stick Farmers Market

Cajun French: le café (lu ka-fā) – coffee

 

The alarm sounds @ 5:30 am!  I smell coffee and that helps a little.  A cup of coffee later consciousness begins and I realize it’s time for a shower.  By 7:30 we’re pulling out of the driveway heading for a farmers market — today is Saturday!

No matter where we are, we look for a Farmers Market to shop.  Most frequently we are in the Baton Rouge, LA area and the Red Stick Farmers Market is our shopping experience.  Our purchases from a typical farmers market makes up the majority of our weekly groceries.
