Cajunville Broccoli Salad

Cajun French: la pacane (la pa-kan) – pecan

Summer is in the air. This recipe is perfect for any picnic, outdoor meal and even snack time. Cajunville Broccoli Salad is a salad with sweetness yet not overly sweet. It can be eaten stand alone or with ham, pork or any of your favorite entrees.

Ingredients:

5-6 cups broccoli florets, about 1 lb
2 oz block sharp cheddar cheese shredded (about ½ cup)
2 oz block pepper jack cheese shredded (about ½ cup)
⅔ cup dried cranberries
1-2 Tbl liquid (orange juice, rum, brandy) – optional
Red onion
1 lg orange (we use naval)
Zest from orange
1 lg apple
2 oz roll andouille
½ cup pecans
Mayonnaise
Sour cream
Cane vinegar
Pure cane syrup
Butter
½ tsp Cajunville seasoning
¼ tsp salt

Equipment:

Cutting Board
Sharp knife for chopping
Mise en Place dishes
Measuring Cups and Spoons
Grater
Zester (sm grater for orange zest)
Sieve
Large salad bowl
10”-12” skillet (we use cast iron)
Medium plate
Tasting spoon
Large mixing spoon
Spatula
Whisk
Skillet spoon for stirring contents in skillet
Serving plates and utensils
Mise en Place:
5-6 cups broccoli florets, about 1 lb – cut bite size
2 oz block sharp cheddar cheese shredded – ½ cup
2 oz block pepper jack cheese shredded – ½ cup
⅔ cup dried cranberries
1-2 Tbl liquid (orange juice, rum, brandy) – optional
⅓ cup red onion slice ½” long x ¼” wide, rinse
1 tsp orange zest
1 cup chunked fresh orange
1 cup chunked fresh apple
2 oz strips andouille, slice ½” long x ¼” wide
½ cup pecans roughly chopped
1 Tbl Butter
¾ cup mayo
¼ cup sour cream
Cane vinegar
Cane syrup
Cajunville seasoning
Salt
Note: Broccoli, Apple and Orange should all be cut bite size

Directions:

⅔ cup dried cranberries
Add 1-2 Tbl liquid (orange juice, rum, brandy, whatever you like)
Set aside

Heat skillet
Add ½ cup strips andouille
Cook until almost crisp
Add 1 Tbl butter
Add ½ cup pecans roughly chopped
Cook until pecans are toasted
Can tell by the smell
Add ⅛ tsp salt

Remove from skillet, spread out on plate and let cool.

Dressing:
Add to large salad bowl

¾ cup mayo
¼ cup sour cream
1 ½ Tbl cane vinegar
1 Tbl cane syrup
1 tsp orange zest
½ tsp Cajunville seasoning
Mix well

Add: 5-6 cups broccoli florets
Toss with dressing
Add: ⅓ cup red onion
1 cup chunked fresh orange
1 cup chunked fresh apple
Combine
½ cup sharp cheddar cheese shredded
Combine
½ cup pepper jack cheese shredded
Combine
Taste. Add salt if necessary.
¼ tsp salt
