Beans and Rice

Cajun French:  le riz (lu ree) – rice

 

PlatedLeftover beans and rice – what to do?  We were looking for something other than just beans and rice.  Think Mujadarrah with a Cajun twist.  Instead of lentils, we have Colorado River Beans and rice cooked with arugula.

Ingredients:

Cooked beans and rice

1 sm orange bell pepper

1 sm green bell pepper

1 sm purple bell pepper

1 med red onion

Hot sauce

Cayenne pepper

Olive oil

 

In a cast iron skillet or other heavy skillet combine beans and rice and heat

Season to taste with hot sauce or/and cayenne pepper

 

Heat 1 tsp olive oil to medium in cast iron skillet

Add onions and peppers to skillet

Grill

 

Plate beans and rice

Top with grilled veggies
