Cajun French: l’ail (l’a-ee) – garlic
Having purchased a bunch of young kale at the farmers market, we were trying to decide how to use it in a different way. Pasta sounded good since we had not made anything with pasta in a while. We also had farmers market Creole red onion, peppers and garlic; so veggie pasta it would be. There were two stuffed crabs left that would add more flavor. A side salad of tomato, avocado, and shallots would round out the meal.

Ingredients
- 2 Tbl olive oil
- 2 cups red creole onion, chopped
- 1 cup sweet peppers, chopped
- 3 cloves garlic, sliced
- 4 cups sliced young kale
- 6 oz dried angel hair pasta
- 2 Tbl garlic olive oil
- Salt and pepper
Heat 2 Tbl olive oil in heavy skillet to medium.
Add onion, peppers, and garlic to oil and sauté until tender. Season to taste.
Add kale until wilted. Season to taste.
Cook pasta according to box directions. When cooked drain and return to pot. Pour 2 Tbl garlic olive oil over pasta and toss.
Add vegetable mixture to pasta and toss.
Serve.
