Island Breakfast Sandwich

Cajun French: trancher (tron-shā) – slice of bread

 

This is another quick meal that is great for breakfast or light evening fare.  In the evening serve with a crisp glass of white wine  and a side of fresh fruit.

We call this one of our tower sandwiches because each ingredient builds on the other.

Per serving

 

  • 1 slice lemon rosemary bread
  • mayonnaise
  • ½ avocado
  • 1 slice smoked salmon
  • 1 egg
  • salt
  • Cajun Seasoning

Spread desired amount of mayonnaise on bread.

Place sliced avocado on mayonnaise.

Place salmon on avocado

Cook egg to your preference.  We cooked a hard fried egg.  Season egg with salt and Cajun seasoning.

Place egg on salmon.
