Crawfish Cream Sauce over Smoked Salmon & Greens

Cajun French: l’ecrevisse (l’a-kru-vees) – crawfish

Crawfish is a staple in south Louisiana. It may be a lowly crustacean to most people, but to Cajuns it can bring a dish to new heights. This dish is one of those. Adding crawfish cream sauce on top of smoked salmon is a dish made in heaven. This cream sauce is good on almost anything.

Francis’ Potato Patties

Cajun French: la patate (la pa-tat) – potato

 

IMG_2993Ms. Francis’ store was across the street from the local school. Since this was before the time of school lunches, she would sell hamburgers to the school children for lunch. On Friday’s, since this was a predominantly Cajun Catholic community, she would make potato patties instead of meat patties. Both of her burgers are still talked about and remembered by people today. Francis was John’s grandmother and while this is not her exact recipe, we wanted to honor her memory and the memories she left with us. Frances would use fish flakes and boiled potatoes to make her patties. We stepped it up a notch and used salmon and potato flakes.

Frances has been the inspiration for many of our dishes. In fact, we posted a potato croquette recipe a couple of years ago based on her recipe. At that time we used sweet potatoes. This one is closer to her original recipe.

Not Your Grandma’s Breakfast

Cajun French:  le pain (lu pain) – bread

 

Breakfast seems to be the meal that can be the most rushed.  Simple, easy to prepare dishes are preferred and often contain leftovers.  Last night we made “Grandma’s Potato Croquettes” (see prior post) updating the recipe using Salmon and Sweet Potatoes — based on one from John’s grandmother where she used white potatoes and fish flakes.  The recipe makes about 12 patties so we had plenty left over.

 

This morning we decided to build a breakfast tower using the croquettes along with all fresh items from the Redstick Farmers Market (except the grapes and bananas) and it was great!  Not only is it easy to prepare and assemble, it makes an elegant presentation.  Grandma would be proud.

Grandma’s Potato Croquettes

Cajun French:  la patate douce (la pa-tat doos) – Sweet Potato

Many years ago John‘s grandmother owned a General Store across from the school in Port Allen, LA.  This was before school cafeterias and Francis would make hamburgers at lunch for the students.  Since most of the students were Cajun Catholics, on Fridays she would make Potato Croquettes using fish flakes.  Francis, the below recipe is in your honor, we hope we make you proud.  The below recipe has been updated using sweet potatoes and salmon.

Salmon Canape

Party Time!

We have a group of friends who enjoy wine tastings.  Every few months we gather at someone’s home to party and taste wine.  Last week was
the annual event at Steve and Diane’s with Steve preparing the main dishes and everyone else bringing compliments.

We took our basic dressing and added to it and made a Salmon Spread for toast rounds.

Cajun Salmon Rolls

South Louisiana is always ready for a party!

With St. Patrick’s Day coming so soon after Mardi Gras, you would think we would be tired of parties and parades.  Not so!  Today was the Baton Rouge St. Patrick’s Day Parade and parties abound.  The day started out cool and clear with a georgeous blue sky getting us all ready for partying.  We had been wanting to try this dish, making it with a Cajun twist.  You may say salmon is not Cajun yet Nova Scotia has excellent premium salmon.
