Cajun French: la carotte (la kar-ot) – carrot

 

Tart BakedTonight dinner was to be a veggie loaf with different techniques.  Laurie was going to place a pie crust on an inverted loaf pan, bake then fill.  John was going to place the pie crust in the loaf pan, fill and bake.  Neither happened…was not a good fit.  Instead we decided to make a veggie tart and that was a perfect fit.  We used the vegetables we had on hand and built the pie using egg and cheese as a binder.  The main thing to remember is to season each vegetable to taste.  This tart will take some time since each vegetable is steamed separately, but it was well worth it.

Veggie Pasta

Cajun French:   l’ail (l’a-ee)  –  garlic

 

Having purchased a bunch of young kale at the farmers market, we were trying to decide how to use it in a different way.  Pasta sounded good since we had not made anything with pasta in a while.  We also had farmers market Creole red onion, peppers and garlic; so veggie pasta it would be.  There were two stuffed crabs left that would add more flavor.  A side salad of tomato, avocado, and shallots would round out the meal.

Red White and Blue Hummus

Cajun French: Juliet (Jūl-ee-et) – July

 

It is 4th of July party time.

Wanting a dish that would reflect the red, white, and blue of the day yet not wanting to make the usual sweet treats, we brainstormed.   Knowing hummus is always a hit with our group, we decided to make two different types  and garnish with peppers.  It is a pretty good red, white, and blue rendition.  It was fun to make and received great comments.

Simple Combinations: Eggs and Peppers

Cajun French:  le piment doux (lu pee-mon doo) – Sweet Pepper

 

This morning was one of those mornings where the time got away from us and still no breakfast – so began “Simple Combinations”.  We will take 2 or 3 ingredients and make a quick, healthy, pleasing meal.  Meals are meant to be enjoyed with family and friends even with our hectic schedules.  So this morning we grabbed eggs and a variety of peppers from the refrigerator and began.
