Honey Roasted Vegetables

Cajun French:  le jardinage (lu jar-deen-aj) – vegetables

 

Veg PlatedThe farmers market was teeming with young vegetables this week; eggplant, radish, squash, peppers were begging to be purchased.  We generally grill our vegetables but this week we decided to try roasting.  After slicing the vegetables we tossed them with Cajun olive oil and local honey.  The results were awesome!  The vegetables were accompanied by pan grilled salmon and salad.  This recipe is very simple to prepare yet full of flavor and aromas.  Honey is the star of this dish so make sure you use high quality local honey.

Locavore Roasted Corn and Sweet Potato Galette

Cajun French: saler (sa-lā) — salt

 

Choosing to be Locavores makes us very aware of food seasons. Each season has its specialties and none more so than Fall in South Louisiana. Last week we purchased sweet potatoes, garlic, and ears of corn. One morning we had eggs with mushroom and corn. While enjoying breakfast, John stated tomorrow we would fix sweet potato galettes. The recipe below is the new and improved version 2.0, as one of our food testers (Matt, twitter.com/@othermattreed) named it.

Jazzed Up Crab

Cajun French:   la crabe (la krab) – crab

 

Des Allemandes Outlaw Katfish Kompany sells stuffed crabs, along with live crabs, soft shell crabs, and catfish, at the Red Stick Farmers Market.  We enjoy making crab cakes yet when the Outlaw Katfish Kompany’s stuffed crabs are available we opt for them.  Each stuffed crab is loaded with crab, seasoning and just the right amount of bread.   We headed home with our usual four stuffed crabs and decided to jazz them up.

Baked Yellow Squash and Shrimp

The farmer’s market was alive with color this Saturday.  Nothing was more brilliant than the yellow squash.  They were so yellow; it was as
if we were looking at the sun!

Squash is so versatile that it is hard to decide how to cook the squash.

The below recipe is a quick and easy meal or side dish.  In fact, you can make two different entrees or side dishes with the basic recipe.
