Cajun Shrimp on Rice

 

Cajun ShrimpPort Allen, LA – Laurie and I are fans of farmers markets and the fresh treasures they hold. On our last visit to the Red Stick Farmer’s Market in Baton Rouge, LA, we purchased fresh shrimp direct from the shrimper, carrots from the farmer who grew them, along with parsley and green onions. Using these fresh ingredients along with others we created the following recipe.

From Market: Fresh Shrimp, Carrots, Parsley, & Green Onions


Ingredients:

  • 1 lb Shrimp (10-12 count)
  • 1/2 onion
  • 3 cloves garlic
  • 3/8 cup olive oil
  • 1 Bag Brown Success Rice
  • 1/2 cup course copped baby carrots
  • Salt & Pepper
  • Smoked paprika
  • Cayenne pepper
  • Parsley
  • Green Onions

Boil bag rice.

Boil carrots with a pinch of salt.

Mince garlic and chop onion fine. Combine with olive oil and let sit while rice & carrots cook. When carrots & rice are cooked, heat onion & garlic over medium heat until onions are tender (3-5 minutes). Add shrimp and season with salt, pepper & cayenne pepper to taste. Cook until bottom side is pink (about 1 minute) and turn shrimp. Sprinkle liberally with paprika and cook 1 minute. Turn off heat.

Mix rice, carrots, and parsley and divide between 2 plates. Place shrimp on rice and spoon oil, onion, and garlic over shrimp and rice. Garnish with chopped green onions. Enjoy!
