platedAt the farmers market we found fresh tomatoes and our mouths were watering. Not wanting just a tomato salad, John’s creative mind went to work. The result was a tomato salad stack with a sweet/savory dressing. The best part of this salad is the taste can be changed by using different jams, dressings, and cheese. Have fun…

Ingredients:

Tomato

Hard Cheese (or any grated cheese)

Asiago Peppercorn Dressing

Black Raspberry Jam

Spinach leaves

Salt

Pepper

 

Dressing:

1/3 part black raspberry jam

2/3 part asiago peppercorn dressing

Mix well, set aside

 

Per Serving:

4 meaty slices tomato

6 large spinach leaves

Grated cheese

Dressing

 

Plate:

Place one tomato slice on plate and season

Top with small amount of dressing

Sprinkle grated cheese on top

Place two folded spinach leaves on top

Repeat for three layers

Place tomato slice on top

Top with grated cheese

Drizzle dressing on top

 

Note:

We used what we had available.

Experiment with different jams, dressings, and cheese.
