Breakfast Pizza

What’s for breakfast?  It is getting toward the end of the week and we are short on breakfast items.  No eggs yet we do have eggbeaters, one whole wheat tortilla, sausage, tomatoes, fresh spinach and feta cheese.  John put his creativity to work and breakfast was born — Breakfast Pizza.  Mais C’est Bon!!
  
 
 
 
 
 
 
Breakfast Pizza
 
1 8″ Whole Wheat Tortilla
1 Roma Tomato, sliced
8-10 thin slices Andouille
1 cup fresh Spinach chopped
3/4 cup Eggbeaters
Feta Cheese
1/3 onion, thinly sliced
1 clove garlic, chopped
Mozzarella Cheese
1-2 tsp Olive Oil
 
Heat skillet, add olive oil.  Saute Andouille, garlic and onions until onions are translucent.  Remove from skillet and place in bowl, set aside.  In same skillet, saute spinach until wilted, add oil if necessary.  Remove from skillet and place in bowl, set aside.  Add more oil if necessary and scramble eggbeaters, season and set aside.  Heat griddle, place tortilla on griddle and heat on both sides.  Turn the heat off and leave tortilla on griddle.  Put a thin layer of Mayonnaise on the tortilla, add a layer of sliced tomatoes, a layer of eggs, a layer of spinach, a layer of feta cheese – break up feta over the spinach, a layer of the Andouille, onions and garlic mixture.  Top with Mozzarella Cheese.  Place griddle with tortilla in broiler and broil until the Mozzarella begins to brown.
