Oatmeal Banana Cookies

Cajun French:  le tit gâteau (lu tee ga-tō) – cookie

 

PlatedEveryone enjoys a sweet now and then…

Since we try to eat healthy and limit sugar and animal fat, sweets are a food group we struggle with and are always looking for new ideas.  When we saw a recipe for cookies that had no egg or animal fat we grabbed it and went to work.  As usual we adapted the recipe to fit our likes and found something that satisfies our sweet tooth.

Ingredients:

3 bananas, mashed

1/3 cup applesauce

2 cups oats

¼ cup coconut milk

1 Tbl cane syrup

1 tsp vanilla

1 tsp cinnamon

1/8 tsp salt

½ cup cranberries

1 Tbl rum (optional)

½ cup pecans, broken in chunks

 

 

Preheat oven to 350

 

Place cranberries in bowl and pour rum over them to hydrate

When mashing bananas, leave some chunks – they give textue to the cookies

 

Combine mashed bananas and applesauce mixing well

Add oats to mixture, blending

Add milk, syrup, vanilla, cinnamon and salt mixing well

Add cranberries and pecans, blending

Let mixture stand for about 5 minutes so oats can absorp mositure

Line cookie sheet with parchment paper or foil

Place tablespoon of mixture on cookie sheet

Place pecan half or whole cashew in center of cookie, push down

Leave some cookies plain with no nut topping

Bake for 15-20 minutes at 350

If using foil, place foil on rack and cool

Once cooled the cookies will pull away from the foil

Turn cookies upside down and cool

 

This is a great snack or dessert
