Stuffed Jalapenos

Cajun French:  bourrer (boor-ā) – stuff

 

PlatedLeftover beans and rice again.  What can we combine them with this time?  We enjoy stuffed grape leaves for snacks.  The last ones we purchased had very tough leaves so we had been using the stuffing in dishes.  Mayonnaise was used as the binder and a stuffing for Jalapenos was beginning.  The mayonnaise also gives a richness to the peppers.  This dish is a great snack or side for a salad.

Ingredients:

4 Jalapenos, halved and seeded

3 artichoke hearts

4 grape leaves stuffing

¾ cup beans and rice

1 Tbl mayonnaise

Salt

Tabasco

Bread crumbs

 

Remove stuffing from grape leaves

Chop artichoke hearts

In a bowl combine artichoke hearts, stuffing, beans and rice, mayonnaise

Season to taste with salt and Tabasco

Place mixture in Jalapeno halves

Top with bread crumbs

Bake in preheated 350 degree oven for 30 minutes
