Crabmeat and Pasta

Cajun French:  l’ail (l’a-ee)  –  garlic

 

Having crabmeat and greens in the frig and needing to use them, we decided to put them together and serve with pasta and lots of garlic.  This dish will make everyone smile and go back for seconds and thirds.  The dish could be turned into a casserole and would be great for a pot luck.

Enjoy!!Ingredients:

  • 6 oz whole wheat angel hair pasta
  • 12 oz crabmeat, picked for shells
  • 11 lg garlic
  • 6 Tbl olive oil
  • ½ cup parsley
  • ½ cup arugula
  • ½ lg lime

Chop each garlic in four

Heat 5 Tbl olive oil to low in cast iron skillet

Sauté garlic in olive oil until just tender

Add arugula to garlic and sauté till wilted

Add crabmeat and sauté until warm

Pour juice of ½ lime over mixture and toss

 

Boil pasta according to package instructions adding 1 Tbl olive oil to water

Drain pasta when cooked

Add cooked pasta to crabmeat mixture

 

Add parsley to pasta and crabmeat mixture

Toss well

 

Serve with a side of bread (your choice)
